Here's what he had to add about this quick holiday treat, "I recently made this simple treat for an office bake-off and they were a huge success! These are so easy to make and people are shocked when I tell them there are only three ingredients. Just make sure to make tons to share, these will go fast!" Here's what you'll need to put together his quick creation:
Ingredients:
Instructions: Using a food processor crush the Oreos until crumbs remain. Turn off and add room temperature cream cheese in chunks and pulse until mixture becomes dough-like. Take the newly formed dough and roll into small balls. Place dough balls on a wax paper-covered cookie sheet and freeze for 4+ hours. Using a double boiler or microwave melt chocolate chips. Roll the (still frozen) dough balls in the melted chocolate. If balls start to thaw before finishing refreeze for an additional hour, otherwise, the balls will lose shape. Michelle Brewer said she was opening Brewer’s Fine Jewelry, a store she co-owns with her husband, on Saturday morning when a herd of about nine "good-sized does" swarmed the sidewalk and began charging at her. Brewer doesn't specifically recall the incident, but was told by others that one deer kicked her "three or four feet" into the air, and then the rest of the herd trampled over her. We adopted her from the humane society when she was only a year old. She has the personality of a cat that I have never seen before. You have to pet her just right (her way) or you're not allowed to pet her. If you are being too loud, she meows at you. She is a very lazy cat and doesn't like to play too much, but she is absolutely lovable when she wants to be. We love her so much!" Here's what she had to add about her calorie-conscious dish, "Here is a yummy recipe that is sugar-free for those with special diabetic needs. I wanted to share this recipe so that those of us with dietary restrictions wouldn't be left out and can enjoy all the fun of eating a scrumptious cheesecake." Here's what you'll need to put together her (still) decadent dessert:

Instructions: Preheat the oven to 325° F. then grease and lightly flower an 8-inch springform pan. Using a baggie crunch up and combine gingersnaps, graham crackers, 2 tbsp Splenda. Place mixture in a large bowl and add melted butter. Press mixture on the the bottom and two inches up the sides of the pan to form the crust.With an electric mixer beat cream cheese and remaining Splenda until light and fluffy. Stir in pumpkin mix then mix in molasses, evaporated milk, maple syrup, cinnamon, nutmeg, allspice and vanilla. Beat in eggs one at a time, mixing until smooth. Pour batter into prepared crust and bake for 90 minutes or until center of cheesecake is set. Allow to cool in pan for 30 minutes then refrigerate overnight. Makes eight servings.
