Whitedove463's Heart Healthy Gingersnap Pumpkin Cheesecake

Whitedove463's Heart Healthy Gingersnap Pumpkin CheesecakeToday's recipe comes from Gamesviller Whitedove463 who wanted to share a wholesome holiday treat, her delicious Heart Healthy Gingersnap Pumpkin Cheesecake. Here's what she had to add about her calorie-conscious dish, "Here is a yummy recipe that is sugar-free for those with special diabetic needs. I wanted to share this recipe so that those of us with dietary restrictions wouldn't be left out and can enjoy all the fun of eating a scrumptious cheesecake." Here's what you'll need to put together her (still) decadent dessert:

 

Crust Ingredients:

  • 3/4 cup Gingersnap cookie crumbs
  • 3/4 cup Crushed fat free graham crackers
  • 2 tbsp Splenda no calorie sweetener
  • 1/4 cup Unsalted butter, melted

Cheesecake Ingredients:

  • 3 (8-ounce) Blocks fat free cream cheese, softened
  • 1/2 cup Splenda no calorie sweetener
  • 1 1/2 cups Canned solid pack pumpkin
  • 1 tbsp Molasses
  • 1/2 cup Nonfat evaporated milk
  • 1/3 cup Maple syrup
  • 1 tbsp Vanilla extract
  • 3/4 tsp Ground cinnamon
  • 1/2 tsp Ground allspice
  • 4 large eggs

Instructions:

Preheat the oven to 325° F. then grease and lightly flower an 8-inch springform pan. Using a baggie crunch up and combine gingersnaps, graham crackers, 2 tbsp Splenda. Place mixture in a large bowl and add melted butter. Press mixture on the the bottom and two inches up the sides of the pan to form the crust.

With an electric mixer beat cream cheese and remaining Splenda until light and fluffy. Stir in pumpkin mix then mix in molasses, evaporated milk, maple syrup, cinnamon, nutmeg, allspice and vanilla. Beat in eggs one at a time, mixing until smooth. Pour batter into prepared crust and bake for 90 minutes or until center of cheesecake is set. Allow to cool in pan for 30 minutes then refrigerate overnight. Makes eight servings.

Full prep and cool time: 140 minutes to prep, bake and cool

Two Gamesvillers Scoop Up Big Cash This Past Weekend

Rudd212004 brought home BIG cash in CatchUp CoverAllCongratulations to our latest lucky winner who successfully covered'em all and is now taking home cash in CatchUp CoverAll. Just yesterday Rudd212004 of York, PA, scored a whopping $469 in crisp greenbacks by successfully hitting the big jackpot! Nice work!

Man Gets Robbed for $2 MillionTalk about bad luck!

A man in Taiwan was robbed of more than $2 million in cash that he had just withdrawn from the bank in broad daylight. Three masked gunmen robbed the 50-year-old victim on earlier this week in the southern city of Tainan, pulling off the highest-value robbery in city history with a heist of nearly $2.39 million. The robbers approached the victim he drove from the bank to his watch shop nearby and police are still looking for the three gunmen within the city of Tainan. Read the full story at Yahoo! News...

Kpk830 Shares Her Chewy Pecan Pie Squares

Kpk830's Chewey Pecan Pie SquaresToday's recipe comes from Gamesviller Kpk830 who wanted to share a holiday favorite, her tasty Chewy Pecan Pie Squares. Here's what she had to add about her creative dessert, "I picked this recipe because it's fairly simple and makes a great substitute for the traditional holiday pie. I'll make several batches for various get-togethers and parties over the holiday season. They're always a crowd pleaser." Here's what you'll need to put together her delicious holiday treat:

 

 Ingredients:

  • 1 pkg. Yellow cake mix
  • 5 Large eggs
  • 1 C Dark corn syrup
  • 1 C Sugar
  • 1/3 C Vegetable oil
  • 1/4 C Butter, melted
  • 2 C Chopped pecans

Instructions:

Preheat oven to 350° F.  Grease a 13 x 9 x 2 inch baking pan. In large bowl mix yellow cake mix, 1 egg and 1/3 C vegetable oil until crumbly. Press into bottom of prepared pan and bake for 20 minutes. In a separate bowl beat remaining eggs (4) with corn syrup, sugar and butter with an electric mixer, at a medium speed until blended. Stir in pecans and pour on top of cake mixture in pan. Bake for 45 minutes or until mixture is set. Cool completely and cut into squares. Recipe yields two dozen squares.

Interview: Tabutami Wins Quick-Draw Poker, Prize Becomes Big Help This Winter

What was her big moment like? How will she spend her winnings? Find out below...

Gamesville: Congratulations! What was it like when you realized you won?
When the screen first popped up that I had won I thought it was just stating that there had been a winner. It took me a few minutes to realize that I had won! Cindyrellie was in the chat room with me and we both got very excited. It is still so shocking to me!

 

What will you spend your winnings on?
The winnings will go towards heating the house this winter. I am very grateful to Gamesville for this prize, words cannot express my emotions enough.

What do you do for a living?
I am currently unemployed. Best part is I can see my family more. The worst part is getting turned down for jobs that do not exist right now. This prize money should be a big help.

What songs could you listen to for the rest of your life?

  • McFadden And Whitehead - Ain't No Stopping Us Now

What do you treasure most in the world?
I treasure the love of my family the most. This is something that should never be taken for granted and forever cherished. Life is so short.

Tabu is my choice of perfume and Tami is my name.

What game would you like to see the Gamesville team create next?
I love everything about Gamesville, but I do miss the original prize payouts of Magic 21. Some type of match game for prizes would be fun, like the one during the intermissions.

Anything else you'd like to add?
There was no real secret to my win, just luck and a lot of prayers. Thank you so much Gamesville. Have a wonderful Thanksgiving and a very Merry Christmas! May 2010 be a fantastic year for everyone!

Man Breaks Guinness World Record For Pulling A Bus With His Hair

More than 200,000 people around the world came together last week on November 12th to break some wacky records on the fifth annual Guinness World Records Day. The highlight and feel good story of the day was the impressive comeback of Manjit Singh, the man who broke a world record for the furthest distance to pull a double-decker bus with hair in Battersea Park, London. Back in November 2007, Singh's record breaking dreams were dashed when he failed to break the record for furthest distance to pull a double-decker bus with the ears which makes his comeback this year even sweeter.
