      <description>&lt;br&gt;From the kitchen of &lt;a href=&quot;http://www.gamesville.com/profiles/Kandyisdandy47&quot;&gt;Kandyisdandy47&lt;/a&gt; comes this recipe for Enchilada Casserole... &lt;p&gt; &lt;strong&gt;Ingredients&lt;/strong&gt; &lt;/p&gt;&lt;ul&gt; &lt;li&gt;1 med onion &lt;/li&gt;&lt;li&gt;2-lbs hamburger meat &lt;/li&gt;&lt;li&gt;1/4-teaspoon oregano &lt;/li&gt;&lt;li&gt;1 cup corn &lt;/li&gt;&lt;li&gt;2 cans enchilada sauce &lt;/li&gt;&lt;li&gt;2 8oz. cans tomato sauce &lt;/li&gt;&lt;li&gt;2 tablespoons oil &lt;/li&gt;&lt;li&gt;1/2-teaspoon pepper  &lt;/li&gt;&lt;li&gt;12 large tortillas &lt;/li&gt;&lt;li&gt;Sharp cheddar cheese &lt;/li&gt;&lt;li&gt;Salt to taste &lt;/li&gt;&lt;/ul&gt; &lt;strong&gt;Directions&lt;/strong&gt;  &lt;ol&gt; &lt;li&gt;Saute onion in oil.  &lt;/li&gt;&lt;li&gt;Add meat and brown.  &lt;/li&gt;&lt;li&gt;Add corn, herbs, salt, and pepper.  &lt;/li&gt;&lt;li&gt;Combine tomato sauce and enchilada sauce in a bowl. &lt;/li&gt;&lt;li&gt;Pour half of mixture over the meat mixture and simmer for 5 minutes.  &lt;/li&gt;&lt;li&gt;In the bottom of a shallow casserole dish or rectangular cake pan, arrange 6 tortillas.  &lt;/li&gt;&lt;li&gt;Pour meat mixture over this.
